Great Dessert: Shokudo's Honey Toast

 One thing that I personally find divine about anything, is what I like to call, “Simplicity is Beauty”. This is an idea that often seems to be cast to wayside in terms of deserts. Far to often, pastry chefs get caught up in the bells and whistles of desserts. In this age of Food Network Challenges, I believe that pastry chefs should take a step back. Sure the sauce paintings on the plate, and elaborate garnishes on desserts with complex flavor profiles are nice, but sometimes you just want something to satisfy your sweet tooth. This is exactly the sort of mood that Shokudo‘s Honey Toast appeals to. 

I might be over analyzing this, but it is the simplicity of it that makes it beautiful. Toasted bread cut into cubes, Honey, Ice Cream, and your choice of Cinnamon, Sweet Red Bean, or Chocolate, Caramel, or Strawberry sauce. And the best part… It tastes good!

The brilliance of Honey Toast doesn’t end there.  I know that as a Pastry Chef, I shouldn’t be advocating this, but from a service stand point, it is so simple, that even servers can’t screw it up. Granted, they could burn the toast, but to be honest, if you can’t make toast, you don’t belong in the food service industry. That ranks right up there with burning jello. Honey Toast is something that requires little training to produce, and as such could easily be assigned to servers, prep cooks,  or even dish washers (don’t forget to wash your hands!) 

No longer relegated to home kitchens or hole in the wall establishments, Honey Toast is exactly the kind of dessert that I wouldn’t mind seeing more of in restaurants. Not every restaurant needs to have these super elaborate desserts that requires a slide rule, and working knowledge of architecture to plate. In fact, a dessert like this would definitely remove that stick from the butts of more than a few uppity restaurants. Like the expression says, “Keep It Simple Stupid!”

  2. In terms of “wow” factor, it helps that the dessert is bigger than your head!

    The first time I tried this I too was blown away by how simple it was and how such humble ingredients could be elevated to such decadent heights. It’s just bread, honey and your choice of extras. Perfect!
